General description: | Potassium disulfite (Potassium metabisulfite, PMB) is an inorganic salt with antimicrobial properties. It is a sulfiting agent that prevents browning of foods. Its genotoxic and cytotoxic effect has been assessed. PMB undergoes hydrolysis to form potassium bisulfite. |
