Biochem/physiol Actions: | Dextran is a, which is commercially used as a drug, particularly as a blood plasma volume expander. It is used as an adjuvant, emulsifier, carrier, and stabilizer in the food, pharmaceutical, and chemical industries. Sephadex, a cross-linked dextran is broadly used for the separation and purification of protein. In the food industry, dextran found its use as a thickener for jam and ice cream. It inhibits the crystallization of sugar, thereby enhancing moisture retention. This helps in maintaining the flavor and appearance of various food items. |
