| General description: | Azocasein is a chromogenic derivative of casein. Protease degrades azocasein to yield TCA-soluble azopeptides with high UV-absorbance. This azocasein assay is widely employed to estimate the protease production by bacterial fermentation on synthetic substrates from glucose and inorganic salts. |
