Enzymatic Assay Colorimetric determination of Agarase activity resulting in reducing suger formation: Agar + H2O Agarase → Reducing Sugar (measured as D-galactose) One unit will produce 1.0 μg of reducing sugar from agar per minute at pH 6.0 at 43 °C.
