| General description: | Casein is a calcium (phosphate) binding phosphoprotein. It is present in mammalian milk and constitutes about 80% of the total bovine milk proteins. Bovine milk consists of four casein peptides, such as αs1-,αs2-,β-, and κ-caseins. Casein exists in milk as micelles. Casein from bovine is produced by the mammary gland under multihormonal control. |
